So I found this recipe on Hy-Vee’s website. Can anyone say Yum?? I had to share the recipe because just the sound of it sounded delicious!

All you need:
4 boneless, skinless chicken breasts
1/3 cup Hy-Vee sour cream
1/2 cup Hy-Vee bread crumbs
1/2 tsp chipotle chile powder
Hy-Vee salt and pepper, to taste
corn on the cob
spinach
red grapes

All you do:

  1. Preheat oven to 350°F. Coat each chicken breast with sour cream.
  2. Stir together bread crumbs, chipotle, salt and pepper. Roll each chicken breast in breadcrumb mixture.
  3. Place in a greased 9-by-13-inch baking dish. Bake uncovered 20 to 25 minutes or until internal temperature reaches 165°.
